Since coming home from my trip, I decided to go on a little treat making adventure! Yesterday’s treat: chocolate coconut truffles!


These babies are filled with a mixture of chocolate, coconut, and arrowroot cookies, among other delicious ingredients. They are then coated in semi-sweet chocolate and sprinkled with coconut. I definitely think they are the next step up from my last coconut baking adventure!


Today I made hard toffee candies. To be completely honest, they were supposed to be caramels, but I over cooked them ever so slightly and they are too hard (I followed the recipe to the exact temperature, but I guess it was too much for my elevation). That doesn’t mean they aren’t delicious, because they are truly amazing! I’m thinking of trying another batch tomorrow and cooking it to a little lower temperature than the recipe says, and hopefully they’ll turn out. In any case, there is nothing wrong with a good piece of toffee!
