Coconut Coconut Coconut!


I’m going through a coconut phase right now. For the last few months, I’ve been loving coconut. I won’t go so far to call it a craving; it’s more like if there is a choice to have something coconut, I will always choose coconut.

Anyway, this whole coconut obsession has led to a new found “mission” of baking coconut goodies. To be completely honest, I’m also on a mission to convince someone (ahem, K, ahem) that coconut is a worthy dessert food. She confessed that once she bought a piece of coconut cheesecake and found it completely disgusting. I, on the other hand, had a marvellous piece of coconut cheesecake when we went out for dessert together once. So, basically, I think my end goal is to bake an amazing coconut cheesecake.

For now, I decided to start with something a little simpler: I made plain old vanilla cupcakes and topped them with white chocolate butter cream icing and toasted shredded coconut. They’re actually quite delicious! We’ll have to see what everyone else thinks!

  1. I love coconut! Coconut is a major component in my all time favorite (all be it mysterious) desert. Twice in my life (once in Hawaii and once in Jamaica) , 20 years apart, I enjoyed some sort of coconut creme mandarin/orange sponge jelly roll iced with butter cream and coated in roasted coconut. I’ve never been able to successfully duplicate the recipe at home and am always on the lookout for recipes or shops who may offer a similar cake. Thanks for sharing your cupcake combo suggestion – YUM – I will have to try this one soon.
